The Smokery

This award winning part of the business has the benefit of direct access to the source of our fresh fish collection network. The success and quality of our products can be gauged by the fact that we supply some of the country’s top chefs and food halls. We can proudly list Selfridges, Harvey Nichols, Fortnum & Mason, Harrods, The Ritz, The Berkeley, Claridges, The Savoy, Wheelers of St James, Bibendum, to name a few. This year we also supplied our Severn & Wye Seafood restaurant to the Royal Chelsea Flower Show, Hampton Court Palace Flower Show and the Ryder Cup.

We also are very experienced exporters; we send weekly shipments to Italy, Germany, Greece, Dubai, Bahrain and France. We have also exported to Japan, India, Sudan, Nigeria, Singapore, Hong Kong, Jordan and Holland. Once again we target the very top end restaurants and retail outlets.

Our production techniques and smoking processes are still very traditional and our grading, filleting, curing and cutting are still mostly done by hand. We chip all our own oak wood for smoking, which gives our smoked products a unique distinctive taste. We can either hang or lay out the fish for smoking, depending on your preference. We can also design recipes and specifications to suit any individual requirements you may have.

One of the secrets of our success is that we are always keen to work with chefs and buyers to develop ideas and new products to ensure that our customers are completely satisfied with their finished product.
