When we say wild salmon our minds are instantly drawn to the misconception that all salmon originates from Scotland. As quite often in life, stated facts are not as they first appear. The wild salmon fishery on the River Severn has recorded up to 30,000 wild salmon caught in a season, and was such a significant fishery that it was recorded in the Domesday Book.

The Rivers Severn and Wye are synonymous not only with wild salmon but also with my passion, the elver and eel, the two rivers being one of Europe’s biggest elver fisheries. I am very privileged to have spent my childhood fishing and collecting this Silver Harvest with my father. I gained invaluable life experience which has formed the basis of my decision to start Severn & Wye Smokery.

Severn & Wye Smokery is situated between these two great salmon rivers on the edge of the Royal Forest of Dean. Starting with two flagship products, smoked wild salmon and smoked eel, the business has grown to produce a full range of smoked fish products.

Due to the continued growth and success of the smokery, it became necessary to relocate the business. In September 1999 we moved to a new state of the art, purpose-built fish processing plant at Westbury-on-Severn. From this site we have focused all our fish collection, processing and distribution. In 2007 the original smokery was totally renovated, and heavy investment was made in the fabric and equipment within the old site. Both sites have EEC approval and are compliant with the BRC Higher Level Accreditation to reassure all our customers that we operate a clean and safe business.
